Okra Curry: A Perfect Side or Main Dish

Our delicious okra curry is made by simmering okra in a spicy and aromatic sauce flavoured with cumin, coriander, turmeric, and garam masala, among other Indian spices. Okra, commonly known as 'ladyfingers', is a popular vegetable because of its distinct texture and flavour, which is typically described as a combination between eggplant and green beans. The okra is cooked till tender and imbued with the rich flavours of the curry sauce in this meal. Ingredients

  • 500g Okra
  • 2 Onions
  • 2 Tomatoes
  • 1 Chopped Tomato Can
  • 2 Bullet Chillies
  • 2 Birds Eye Green Chilli
  • Salt & Pepper
  • 1tsp Red Chilli Powder
  • ⅛ tspTurmeric Powder
  • 2 tsp Ground Coriander
  • 2 tsp Ground Cumin
  • 2 tsp Paprika Powder
  • Garam Masala
  • 1 tsp Garlic Paste
  • Fresh Coriander
  • Limes
 

 

Method

  1. Chop all the okra in small dice/cubes.
  2. Add oil to wok and sauté onions.
  3. Add chopped tomatoes and bird eye green chillies to blender.
  4. Add mixture to the onions.
  5. Add all spices, leave garam masala to sprinkle at the end.
  6. Add okra and then leave to cook.
  7. When done add fresh tomatoes, bullets and coriander to garnish.
  8. Finally sprinkle garam masala and some lime and enjoy with a side of your choice rice, naan or paratha!
