This versatile dish employs the art of stir frying to enhance natural flavour and fragrance. Many Chinese chefs believe that leftover rice stored in the fridge overnight, with much of its moisture drained, makes better fried rice than freshly cooked rice! So it's an ideal dish to cook in larger quantities for a few meals, saving you time throughout the week.

Cantonese Stir-Fried Rice (Serves 4):
Ingredients:
1 packet Cantonese Stir-Fried Rice Spice Paste
2-3 tbsp vegetable oil
1 large onion, thinly sliced
100g (3.5 oz) prawns, ham or bacon
3 1/4 cups (650g) cooked rice
2 eggs, beaten
100g (3.5 oz) frozen mixed vegetables
Sliced spring onions and red chillies, thinly sliced, as garnish
Cooking Instructions:
1. Heat oil in non-stick wok on medium heat. Add onion, prawns, ham or bacon
2. Stir-fry for 3 minutes. Add rice and spice paste, stir-fry for 2 minutes
3. Push mixture to one side of wok. Add eggs, cook for 1 minute and stir into rice mixture. Add mixed vegetables and stir-fry for 2 minutes or until hot. Garnish
Cooking Tip: Snow peas, button mushrooms or vegetables of your choice may be used instead of meat or prawns
