Singapore Chicken Curry (Serves 4):
Ingredients:
1 packet Singapore Chicken Curry Spice Paste
2 tbsp vegetable oil
350g (3/4 lb) chopped chicken pieces
2 potatoes, cubed
2 cups (440 ml) coconut milk or milk
Cooking Instructions:
1. Heat oil in saucepan on medium-low heat. Add spice paste and stir-fry for 1/2 minute
2. Add chicken and potatoes. Stir-fry for 3 minutes. Add coconut milk and bring to boil
3. Reduce heat, simmer uncovered for 20 minutes or until cooked. Serve hot with rice or bread.
