Banana Coconut and Choc Chip Muffins

Hey there, how are you? It’s been a while since I’ve sat down on my laptop and added anything to the website, apologies for being MIA, it’s all been down to my kitchen renovation which is nothing short of stressful to say the least. Baking is something that I find helps to de-stress me and this Banana Coconut and Choc Chip Muffins recipe is perfect for that. Easy to whip up for breakfast or for tea, they’re delicious and since they contain fruit, we can convince ourselves that these muffins good for us (ok, so the coconut is dried, it’s still fruit, lol).

I love bananas, it’s one of the few fruits I enjoy eating but occasionally they go past their best and this is a great way to use them up. You can add other dried fruits in place of the desiccated coconut but the banana and coconut actually pair really well together (not to mention the fact that I usually have these ingredients at home).

They’re super easy to make so are great for bake sales or coffee mornings, best made on the day because of how quick they are to make. Whether you bake these muffins for breakfast or tea, just make sure you put aside a couple for yourself as they won’t hand around for long.

You will need: for Banana Coconut and Choc Chip Muffins

2 cups of self raising flour
100g chocolate chips
1/2 cup of desiccated coconut
1/2 tsp of salt
2 ripe bananas, mashed
2 medium eggs
3/4 cup of granulated sugar
1/2 cup of melted butter

Method:

1. Preheat the oven to gas mark 5 (190 degrees Celsius).

2. In a bowl measure the flour, chocolate chips, desiccated coconut and salt, whisk together to combine.

3. In a separate clean bowl, mash 2 ripe bananas and add eggs, granulated sugar and melted butter, mix thoroughly to combine.

4. Add the wet ingredients to the dry ingredients and fold through gently, don’t over work the mixture.

5. Prepare a muffin tin with cases and spoon 1 heaped tablespoon of the mixture into each of the cases, you’ll get between 12 – 14 muffins. Bake in the oven on gas mark 5 (190 degrees Celsius) for 15 – 20 minutes till golden brown, you can usually tell they’re done by the wonderful aroma in your kitchen!

6. Enjoy hot out of the oven with a hot cuppa!
