Persian Salad With Crispy Triangles Recipe - Festive Feast!

Story times are unarguably the best time of the holiday season where everyone is just lazing around with hot drinks taking turns to tell stories of their life experiences. Some funny, some embarrassing, some heartfelt.


One of the most cherished stories from our family nights is the one of our annual trips to Persia. We had been going to Persia every year from when I was around a year old. My dad was the type that loved staycations. So going to the theme parks every week just wasn’t his thing. At first, we kids didn’t like the idea of not going for fun throughout the year and had to wait for the annual trip. But as we got older, we started looking forward to our yearly trip. It was not just us, it was all of our cousins, uncles and aunts. It was a huge family affair, and we loved it.


We’ve had many many fights over who gets the window seat, to who gets to eat which snack.


Anyhoo, this is just one of the many reasons why Persia quickly became our go to destination. It was relatively inexpensive to visit. The visas were easily granted. The food was to die for. And the Persian salad is the one thing that was a constant in our Persian food adventures.


Enough about my Persian dreams and stories. Let’s hear it from another one of my colleagues. He says:

For the Salad

Ingredients

1 English cucumber

½ red onion

2 tomatoes

½ Green Capsicum

Handful of Fresh mint

2 tbsp dried or fresh parsley

2 Lime, juiced

1 tbsp Sumac

1 tsp salt

½ tbsp black pepper

2 tbsp olive oil

Method:

Finely chop up your cucumber, onion, tomatoes, capsicum, and the herbs.

Mix in the chopped vegetables in a large mixing bowl.

Add in your chopped herbs

Take a separate small mixing bowl and add in the juice of 2 limes, salt, pepper and the olive oil.

Add your dressing to the salad just before serving, toss, and enjoy!

For Crispy Triangles

Ingredients

6 Tortilla (can be white, brown, whole meal, etc)

Oil for frying

Method:

Take your tortilla and cut them into 8 triangles

Take a frying pan and add in your oil. Make sure to keep at least an inch of depth for the tortilla triangles to fry evenly.

Heat the oil until it’s medium hot.

Fry the tortilla triangles in small batches, making sure not to over brown or burn them

Once fried, take them out and drain on a kitchen towel.

Cool them, and enjoy scooping the salad with the crispy tortilla triangles.
