The Rosendale Wagyu Sirloin strikes the perfect balance between rich flavor and tenderness. Its generous fat cap melts beautifully, intensifying the marbled flavor of the meat and ensuring a juicy, succulent result. The deep savory notes are harmoniously complemented by a subtle sweetness, derived from the cattle’s unique chocolate-based diet.

 

Raised in the fertile pastures of the Wicklow Mountains, F1 Wagyu cattle are nurtured on a high-quality grain diet, enriched with a unique chocolate finish that contributes to the beef’s rich, tender texture and exquisite marbling. Through meticulous breeding and feeding practices, Rosendale ensures only the highest standards of Wagyu, offering 5+ Gold and 7+ Diamond graded cuts.

 

The sirloin is sourced from the hindquarter and the lower ribs, sitting just above the fillet. While leaner than the ribeye, it remains tender and juicy. The cut features a natural layer of fat on top, which enhances its succulence and helps infuse rich flavors into the meat during cooking.

Approx weight 250g - 300g.

 

How to cook a great steak:

  1. Bring the steak to room temperature 20 minutes before cooking.
  2. Liberally season the steak with Sea Salt and Pepper. 
  3. Heat a heavy-based pan until pan is smoking hot
  4. Cook the steak on either side for 3 – 4 minutes or until the eye of fat is starting to melt and turned a beautiful golden brown colour, and the meat is forming a stunning dark crust to it. 
  5. Melt a small knob of butter over the steak.
  6. Remove from the heat and let rest for 10 minutes.
  7. Enjoy!
