Coming from a South Asian background, we’re adorned in fritters.
Raining? Fritters! Cold? Fritters! Drinking tea? Fritters! Breaking fasts? Fritters!
And all the kinds of fritters. Potatoes, spinach, aubergine, onion, and even chicken! We can make fritters out of almost anything!
I remember during my teenage years, trying to learn to cook, I would hate making fritters. So much so that I did not eat a single one for a whole year. Now that I look back, I cannot even imagine how I spent a year without them!
The reason why I hated making them was because I could never get the consistency right. Sometimes it would be too runny, other times it would be too hard and dry. It was never just right. Another reason was the baking soda. Too little and the fritters are dry and hard. Too much and they’re melting in the oil. But that’s all in the past.
I am a pro fritter maker now.
And so, today we’re sharing a story from one of our team members about.. You guessed it .. Fritters!
She says:
“So back in the days when we used to go to our grandma’s for the summer holidays. She would make sure we had the most fun outdoors, playing, running, and just chilling. On the days when it would rain and we couldn’t play out, she would make us onion and potato fritters. What made them special was the sweet tamarind chutney that she would make fresh with the fritters. We would all gather around the hot wok and would try eating the fritter right out of the hot oil. Jumping on one foot and then the other with the fritter burning our mouths, has become one of the most told stories at our family gatherings now.”
I am sure we’ve all tried to eat a fritter right out of the oil at some point. And rightly so. They're delicious. So how could we not start with fritters?
We’ve put our twist on the traditional fritters with our carrot and paneer fritters with coriander dip for dunking your fritters.
And the best bit of all? We didn’t even have to step outside to get the groceries. Everything was delivered fresh by SaveCo!

Carrot & Paneer Fritters
Ingredients
2 Egg, beaten
½ cup plain flour
½ onion coarsely grated
2 large carrots coarsely grated
250g paneer coarsely grated
1-inch piece of ginger, peeled and finely grated
1 red chilli finely chopped
Salt to taste
½ tsp black pepper
Vegetable oil, for frying
For the coriander dip
200g Greek yogurt
2 tbsp butter or ghee
A handful of fresh coriander, chopped
Salt to taste
½ tsp smoked paprika
½ tbsp coriander seeds, crushed
Method
Peel and grate the carrots. Grate half an onion and squeeze all of the water out. Grate the paneer. Add the carrots, onion, and paneer in a large bowl. Add in the ginger, red chilli, the eggs, flour, and the spices. Mix everything so it's well combined and the veggies are coated. The mixture should be quite stiff – if the batter isn’t coating the veg, add another tablespoon of flour or a small splash of milk.
Fill a medium heavy-based saucepan no more than a third full of vegetable oil and heat to 180C, or until a cube of bread sizzles when dropped into the oil, and browns in about 30 seconds.
Form the fritter mixture into bite-sized balls using your hands or two small spoons. Flatten them once they’re in the pan. Fry the fritters in batches of five or six, turning in the oil every few minutes for a total of 5-6 mins, or until crisp and golden brown. Drain on kitchen paper and serve hot, or leave to cool and reheat before serving.
Will keep in an airtight container in the fridge for up to three days, or in the freezer for three months. To reheat, heat the oven to 220C/200C fan/gas 7, transfer to a baking tray, and bake for 5-10 mins until crisp and heated through.
To make the dip, combine the yoghurt, fresh coriander, and some seasoning. Melt the butter or ghee in a small frying pan, then stir in the paprika and coriander seeds. Sizzle for 1 min, then pour over the yoghurt. Serve with the fritters for dunking.
