In a hot pan, add cooking oil of your choice and allow it to heat up.
Add SaveCo’s marinated chicken cubes and cook on both sides for 2–4 minutes on medium-high heat, until fully cooked and golden.
Start assembling your bowl: on a bed of white rice, add chopped cherry tomatoes, chopped cucumber, cooked marinated chicken, finely chopped red onion, chopped avocado, and pomegranate seeds.
For the dressing, combine 2 tsp lemon juice, 2 tsp extra virgin olive oil, ¼ tsp black pepper, ¼ tsp salt, ¼ tsp dijon mustard, and 1 tsp honey in a jar. Shake or stir well.
Drizzle the dressing over your bowl and enjoy.
