The Featherblade or Flat Iron steak is an increasingly popular yet lesser-known cut that stands out for its distinctiveness and unique texture. Its name, "featherblade," comes from the line of fat running down the center, which gives it a feather-like appearance. This cut is known for its impressive marbling, where the fat weaves throughout the meat, melting during cooking to provide a rich, juicy flavor with each bite. Due to its higher fat content, the Featherblade steak is ideal for cooking to a medium-rare level, allowing the fat to caramelize and ensuring a tender, succulent result. This combination of flavor and tenderness makes it an excellent choice for those seeking something different from the usual cuts.

How to cook a great steak:
- Bring the steak to room temperature 20 minutes before cooking.
- Liberally season the steak with Sea Salt and Pepper.
- Heat a heavy-based pan until pan is smoking hot
- Cook the steak on either side for 3 – 4 minutes or until the eye of fat is starting to melt and turned a beautiful golden brown colour, and the meat is forming a stunning dark crust to it.
- Melt a small knob of butter over the steak.
- Remove from the heat and let rest for 10 minutes.
- Enjoy!
