The fillet is a highly sought-after cut, renowned for its exceptional tenderness and irresistible flavour. Taken from the lower middle of the back, it forms part of the sirloin. Its tenderness comes from being the least active muscle, resulting in a remarkably soft texture. Although it's a lean cut with minimal fat, it delivers a succulent, melt-in-your-mouth experience with every bite, bursting with rich flavour.

How to cook a great steak:
- Bring the steak to room temperature 20 minutes before cooking.
- Liberally season the steak with Sea Salt and Pepper.
- Heat a heavy-based pan until pan is smoking hot
- Cook the steak on either side for 3 – 4 minutes or until the eye of fat is starting to melt and turned a beautiful golden brown colour, and the meat is forming a stunning dark crust to it.
- Melt a small knob of butter over the steak.
- Remove from the heat and let rest for 10 minutes.
- Enjoy!
