How To Cook The Perfect Wagyu Steaks

Ingredients

Instructions

  1. Remove the chilled steaks from the fridge and bring to room temperature about an hour before cooking.
  2. Just before cooking, sprinkle lightly with salt and pepper on both sides.
  3. Heat a little oil in a frying pan (it should just barely cover the surface of the pan) until hot and almost smoking.
  4. Lay the steak in the hot pan and leave for 2 minutes without disturbing it. Turn over with a pair of tongs and brown the other side for same amount of time.
  5. The steak will firm up as it cooks, especially when cooked to medium rare. You can check this if required, by making a small incision into the meat to take a look.
  6. Remove the steaks from the frying pan onto a warmed plate and leave to rest for about 5 minutes. This is important as it will allow the juices to be re-absorbed into the meat. The resting should not affect the optimum eat temperature of the steak.

Serving suggestion

With Wagyu steaks, it's best to err on the side of caution and serve with neutral vegetables such as lightly seasoned baked potatoes, sautéed mushrooms or leeks. Or for something crunchier, try a side asparagus, broccoli or something as simple as green beans.
