Basar is a mix of masala that is commonly used in Pakistani cuisine. The masala mix mostly goes with tomato-based puree and gravy. It has a pungent spicy kick to it and elevates the flavour of gravy.
Basar can be made at home, with some alterations depending on preference. Some people like the spicy kick basar have to offer, while some like it to keep it mild.
You can mix some of the commonly used spices in the proportions mentioned below, and store it in an air-tight container for up to six months.
It is recommended to make this spice mix in big batches hence I will list all the spices in larger quantities. If you are a restaurant owner or caterer, you can double the quantities.
Here is what you would need from your next grocery trip.
Ingredients
- 200g Mix Masala
- 10g Curry Leaves (curry patta)
- 80g Mustard Seeds (sarson ke danay)
- 60g Fenugreek Seeds (methi)
- 200g Ground Turmeric (haldi)
- 400g Kashmiri Chilli Powder
- 100g Paprika Powder (Shimla mirch powder)
- 200g Dried Fenugreek Leaves (kasoori methi)
What Is Mix Masala
Much of the quantity is eyeballing. Here is an estimate to keep you going. With time, you wouldn’t need to follow the particular quantities but it would become much of a guessing game.
- Cumin seeds – 4 tablespoons
- Coriander seeds – 6 tablespoons
- Fennel seeds – 2 tablespoons
- Bay leaves (3 – 4)
- Cloves (7 – 8)
- Black pepper (2 tablespoons)
- Green cardamom (a few)
- Cinnamon Sticks (2 – 3)
How to Make Basar
- First, roast the cumin and coriander seeds in a skillet. Don’t over-roast it, just slight toasting so the aroma starts releasing.
- After the coriander and cumin seeds are cooled down, take all the spices and blend them in a spice blender.
- You would need to make sure the powder is fine. You can also sift the blended spices using a sieve.
- Now take all the powdered spices, and mix them with the blended spices in a big bowl. Take your time using a mixing spoon.
- When you see all the spices are combined well, transfer them into an air-tight jar for storing and a smaller jar for daily use.
