Growing up, I didn't used to like the sound of Koftas or meatballs as commonly known. There was something about the texture and bite of the kofta that I wasn't a fan of. My mum tried her best to make different variations of Koftas for me to try, mainly because she didn't want to have to make another curry for my dinner.
Fast forward to my wedding, lo and behold, my husband loved everything mince. You give him mince cooked with ONLY ginger and garlic, and he'll happily eat it with chat masala sprinkled over! And there were only so many dishes that I could make with mince. One day he did ask me to make koftas as I was scratching my head thinking what to cook.
Now I didn't want to tell him I didn't like koftas because frankly I had no way of explaining to him WHY I didn't like Koftas. So I said YES to the koftas and called mum as you do!
So here is her famous barbecue lamb kofta recipe for you all to enjoy 'cause if I can make it and actually enjoy it, then I am sure, you are going to love it - if you like mince.
