At Mumtaz, we believe that people with celiac disease or gluten intolerance should be able to eat nutritious foods that have the same texture and taste as gluten-containing foods. The teff flour in this recipe is an ancient grain that is extremely nutritious, containing iron, zinc, and magnesium, and it also has a low Glycemic Index, which is beneficial for diabetics.
