As we all know, brown families have a no-waste culture. Whether it's leftover veggie peels or used shopping bags, they utilise everything.

Back in Pakistan, the chicken shops are very different from Bradford. We used to select the live chickens according to size and breed. The butcher would cut it right in front of the buyer and would give every part of the chicken.

The butcher always kept a portion separate from the rest of the good botis.

That portion was always claimed by my grandmother, her favourite Chicken Gizzards.

Nowadays, the butchers just remove it from whole chicken and sell it off to feed industries as it is a great source of protein. 

But back then it was devoured fresh and cooked with great expertise. My grandmother used to make sure it was not wasted and cooked the same day as it would become stale. 

In our house, it was called Murghi ka Pota, which is its Urdu name.

Start with a Good Clean

Before you do anything, rinse those gizzards under cold water. Remove any leftover bits of fat, skin, or tough membranes. Clean them up until they look nice and fresh, and you’re off to a great start.

Gizzards can sometimes have some extra connective tissue that can make them a bit chewy.

The Salty Wash

Mouth-Watering Chicken Gizzards Recipe

I especially took this recipe from my mom to share it with you guys!

Ingredients

Chicken gizzards- 500 gms

Oil- as required

Onion- 1 medium-sized cut into small pieces

Cloves- ½ teaspoon

Coriander seeds - ½ teaspoon

Bay leaf- 1

Cumin seeds - ½ teaspoon

Green cardamom- 2 

Ginger garlic paste- 1 tablespoon

Tomato paste- ½ cup

Red chilli powder- as required

Yoghurt - 1 tablespoon

Salt- to taste

Garam masala powder- 1 teaspoon

Coriander- for garnishing 

Instructions

  1. Heat oil in a pressure cooker, add onions and let them turn golden brown.

  2. Add cloves, cumin seeds, coriander seeds, bay leaf and cardamom, and let it sauté.

  3. Add the chicken gizzard and ginger garlic paste and let it cook with all the spices so that any smell is eliminated.

  4. Add tomato paste, salt, red chilli powder and yoghurt, mix it all and let the oil separate.

  5. Once the oil is separated, add half a cup of water and close the pressure cooker.

  6. Let it cook for 15 minutes or until two whistles.

  7. Open the cooker after 20 mins, add garam masala powder and more red chillies (if required)

  8. Garnish with coriander and serve with phulki rotis.
