Cheesy Garlic Knots Recipe - Festive Feast!

Have you ever stood in your kitchen, waiting for your mum to finish cooking so you could stuff your face with whatever she cooked? We kids were the same. As soon as it was 6pm, we would start making rounds of the kitchen, asking mum if the food was ready. Especially eager when it was something special. 


Mum’s food is special. And our team agrees. One of our team member shared the following:


“I loved my mum’s food and wanted her to make me different cuisines all of the time. Except for pizza.

I never wanted homemade pizza. It wasn't because I didn’t like the taste, rather because I couldn’t wait for the pizza dough to rest and rise and whatnot. Whenever there was a recipe where it called for the dough to rest, I was completely turned off. Most of it is due to me being very impatient. So, our mum used to make us a bread pizza, using regular sliced white bread as the base, she used to layer it with pizza sauce and tons of cheese with any leftover meat from the night before. It was our ultimate comfort food. So ordinary yet so special. It is one of my favourite memories.”


I agree with her. I mean, who has the time to wait around for dough to do its thing when you're hungry and ready to eat, right? But then, something magical happened in my culinary journey. I discovered a recipe that not only satisfied my cravings for cheesy, garlicky goodness but also didn't demand an eternity of waiting for dough to rise. Enter: the miraculous creation of garlicky cheesy knots.


These knots became my ultimate temptation, a fragrant and irresistible dance of flavours without the patience-testing dough rising episode. Just imagine the aroma of garlic infusing the air, the sizzle of butter in the pan, and the delightful gooeyness of melted cheese—all without the hassle of a lengthy dough process. It was like a shortcut to flavour paradise, and for someone as impatient as me, it was a game-changer.

Ingredients

400g plain flour, plus extra to dust

1 x 7g sachet fast action dried yeast

1 tsp fine sea salt

1 tsp caster sugar

2 tbsp olive oil, plus extra to drizzle

1 head of garlic, finely chopped

½ tsp garlic powder

250 g mozzarella cheese, grated

2 tbsp melted butter

Handful of chopped coriander


Method

Preheat the oven to the hottest it will go (around 240°C, fan 220°C, gas 9), before starting to make the dough. Put in 2 large baking trays, to get really hot.


Mix the flour, yeast, salt and sugar together in a mixing bowl. Make a well in the centre and add the oil, then add about 225 ml water to bring together as a dough. Tip out onto a floured surface and knead for 1 minute, just until smooth. Leave to rest under the upturned bowl for 15 minutes.


Take a mixing bowl, and add in the grated mozzarella cheese, garlic powder, and half of the chopped garlic. Mix well to combine.


Take the dough and divide it into 4. Roll out each ball of dough into a large rectangle. Spread the cheese mixture onto the dough, and start to roll it lengthwise. Once rolled, split the dough in half along the lengths, exposing the cheese mixture. Now cut it in 2.


Now make a knot of the strips and tuck any loose ends under the knots. Make all of the knots.


Bake the knots at 180C for around 20-25 minutes or until golden brown.


Once cooked, take them out and place them in a large bowl.


Add the remaining chopped garlic and chopped coriander to the melted butter. Mix well.


Brush the cheesy knots with the melted garlic butter. Serve warm.
