Mashed Potato Casserole Recipe - Festive Feast!

Holiday season for me means food. Lots and lots of food. Growing up, we’d always have one main dish, that was the star of the menu, usually a protein, and a couple of sides to go with.

 

The reason being, affording more than one main protein was a luxury. So, we’d settle on one main protein, usually a whole chicken, that would become the star of the menu. And then we’d have all of the different sides. At Least two of the sides were made with potatoes. Because you can’t go wrong with potatoes! Ever!

 

We have so many stories from our holiday dinners, and today, we’re sharing a cherished memory from another one of our team members. They say:

“Holiday times were my favourite time of the year. My parents’ used to work full-time, so the only time we could actually get to my grandparents house was on Christmas day. I remember my cousins used to stay for a couple of days every holiday or break, but since we lived further away from them, I could only go a couple of times a year with my parents.

I love potatoes. So Christmas time, my grandmother would make sure we had a couple of different options in potatoes but I loved her simple mashed potato casserole. Nothing fancy. Just simple mashed potatoes, baked to make the tops crispy.

This is one of my favourite memories, and to cherish it, I make sure to make the simple mashed potato casserole for family dinners now.

You could add all the fancy stuff like cheese, crispy bits, panko crumbs etc, but I like to keep it simple just like my grandma.”

So when the time came to decide our holiday menu for this year, I knew I couldn’t forget the mashed potatoes. Hence, here’s my twist on this traditional, creamy, and simple mashed potato casserole.

Ingredients:

2 Large potatoes

100 ml milk

50 ml cream (optional)

Butter cut into small cubes

Salt as per taste

Pepper as per taste

1 cup bread crumbs 

Chives to sprinkle

Method:

Cut and boil the potatoes until fork tender.

Drain and pop them back into the pot. Mash the potatoes with the milk and cream. Turn the stove on at low heat and mix until creamy and smooth.

Add in the salt and pepper as per your taste. Add in the butter and fold.

Take the creamy mashed potatoes out in an oven safe dish. Top with a generous amount of bread crumbs. Top it with some more butter. You could also add some cheese if you fancy.

Bake at 180 degrees for 15 minutes or until golden brown on the top.
