Tomato Soup
I cannot be a traitor not to start my soup recipes with tomato soup. This is my easy and quick yet supremely delicious tomato soup recipe.
What You Need to Make Tomato Soup
- 2 cans of tomatoes (peeled)
- 1 bell pepper
- Few basil leaves
- 1 onion – sliced
- 2 garlic cloves – peeled and crushed
- ¼ teaspoon celery seeds
- ¼ teaspoon oregano leaves
- 1 tablespoon sugar
- ¼ teaspoon red pepper flakes
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 cup pre-made broth
- Salt and black pepper for seasoning
How to Cook Quick and Delicious Tomato Soup
- In a large pot, sauté onions and garlic in some butter. When onions are translucent, add olive oil and sauté for a couple of seconds add tomatoes, bell peppers, basil, celery seeds, red pepper flakes, oregano, and premade broth.
- Cover and simmer for fifteen minutes. Add seasoning as per your taste.
- Remove from heat, pour all the content into the Ninja blender, and whirl them for a minute.
- Sprinkle some fresh parsley and cream and enjoy this soup warm with bread.
Carrot and Ginger Soup
Another great find, I love making this one as there is an obvious chill seeping to the bones late in the evenings. A warm bowl of this soup is like a hug in cold weather, plus a great healthier meal.
Ingredients
- 1 pound carrot – peeled and diced
- 1 onion – diced
- ½ medium butternut squash
- 3 large garlic cloves
- One 2-inch ginger piece – peeled and chopped
- 2 cups pre-made broth
- Pinch cinnamon powder
- Pinch of dried sage
- Salt and pepper for seasoning
- 2 tablespoons olive oil
- ¼ cup double cream
How to Make Carrot and Ginger Soup
- In a preheated oven, at 175 C, place the cut butternut squash (deseeded) upside down. Bake for half an hour and scoop the flesh out, discarding the skin.
- In a large pot, sauté onions with garlic. Sauté until onions are translucent. Add pre-made broth, carrots, squash, and garlic, and place the lid for contents to simmer for twenty minutes.
- Pour the content into Ninja Blender and whirl it for a minute.
- Once everything is blended to perfection put it back in the pot. Add seasoning, dried sage, and cinnamon powder.
- After a boil, pour the soup in bowls to enjoy it warm. Top it with a dash of double cream.
Pro Tip: pre-made chicken broth complements carrot and ginger soup. Use chicken broth or stock as a base to feel the difference in flavour.
Asparagus Soup
This soup is my pick for nights when I am entertaining guests. It has amazing taste, looks grand, is extremely filling, and can make an excellent dinner option.
Ingredients
- 1 pound asparagus – chopped
- 1 onion – chopped
- 2 cups pre-made chicken broth
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 cup milk
- ½ cup sour cream
- For seasoning – Salt and pepper
- Pinch oregano
- 1 teaspoon lemon juice
How to Make Asparagus Soup
- In a pot, less than half of broth, asparagus, and onion. Put the lid on and let the contents simmer for ten minutes.
- Pour the content into the Ninja Blender and whirl for a minute.
- Meanwhile, melt the butter in the pot and stir in salt, pepper, oregano, and all-purpose flour. Stir for two minutes and add blended asparagus puree while whisk to combine well.
- In a bowl, take one ladleful of asparagus puree and combine it with sour cream.
- Add milk to the pot and whisk to combine.
- When milk is mixed well, add the sour cream, seasonings, and lime juice to the pot and whisk to combine.
- Keep it on the heat for another minute and then serve.
